This recipe is light & fresh and perfect for dinner in Summer.
Ingredients
500g Almare Salmon Fillets, skinned and cut into 1 inch cubes
500g cherry tomatoes
2 teaspoons fresh rosemary
2 teaspoons Casa Barelli extra virgin olive oil
1/2 teaspoon Stonemill minced garlic
1 teaspoon freshly grated lemon zest and juice
1/2 teaspoon salt
1/4 teaspoon pepper
Method
- Preheat grill to medium-high.
- Combine rosemary, oil, garlic, lemon zest, lemon juice, salt and pepper in a medium bowl.
- Add salmon and toss through mixture until coated. Place salmon on 8 x 30cm skewers, alternating with the cherry tomatoes.
- Oil the grill rack. Grill the skewers, carefully turning once, until the salmon is cooked through (4 to 6 minutes). Serve immediately.
