Everybody loves a potato bake. This simple recipe takes the classic potato bake and adds a little twist to make it as yummy as ever. With the added ingredients the bake becomes the entire family meal rather than a simple side dish. This meal will cost under $10 for the entire meal only counting the ingredients you use.
Ingredients
- 1kg Potatoes
- 500g Broad Oak Farms Chicken Thigh Fillets
- 4tbs Colway Dijon Mustard
- ½ Medium Sized Onion
- 60g Mushrooms
- 300ml Farmdale Thickened Cream
- 150g Cowbelle Cheese
Directions
1) Turn your oven onto 180 degrees
2) Cut 500g of chicken thigh fillets into sliced strips 3-4cm long
3) Place chicken into frypan and brown until cooked
4) While chicken is cooking peel and finely slice 1kg of potatoes
5) Slice half a medium sized onion
6) Slice 60g of mushrooms
7) Once chicken is cooked add 95g of Dijon mustard to the frypan and stir to cover the chicken
8) Now you are going to use your baking dish to combine all of the ingredients
9) Drizzle a small amount of thickened cream on the base of the baking dish and spread it out over the bottom
10) Layer the first level of potatoes on the base of the baking dish
11) Cover the potatoes with a layer of onion, mushrooms, mustard chicken, cheese and thickened cream
12) Place a second layer of potato slices on top of the previous layer
13) Cover again with onion, mushrooms, mustard chicken, cheese and thickened cream
14) Place a final layer of potato slices on top of the of the previous layer
15) Drizzle the potato with the remaining thickened cream and cheese
16) Place aluminium foil over the top of the baking dish
17) Put the baking dish in the preheated oven
18) Allow to cook for 1 hour (it may need a little more or a little less depending on your oven)
19) Once cooked take out of the oven and serve.
